When you will serve them on your next picnic or bbq, people will mistake them for bakery-style buns, because they are so good. Heck, they are even better than store-bought. These are completely homemade, so you know exactly what kind of ingredients you put in the dough and the recipe is super easy to follow. Brioche Burger Buns are the ultimate buns that you can use in all kinds of burgers. Our favorite right now is the beef burger (click for the recipe). 

Yeast - Use fresh or active dry yeast. When using fresh yeast, always double the amount of active dry yeast.

Milk - Not only does it add a bit of sweetness it also enriches the flavor. You can't substitute with oat or other milk. You can substitute with water, but we highly recommend using full-fat milk.

Sugar - No, these aren't super sweet at all, the sugar adds a hint of sweetness that's perfect for any burger. We don't recommend leaving out the sugar.

Flour - Use all-purpose flour or plain flour, flour type 00.

Butter - Use unsalted butter. Makes a tasty, buttery texture. Prevents sogginess and it's easier to toast the buns before making your favorite burger.

Egg wash - We use egg wash twice in this recipe. Before the final proof and right before sprinkling with sesame seeds. Why? Because that way you get that beautiful golden brown exterior.

Sesame seeds - Optional but highly recommend sprinkling the buns with sesame seeds. They add a special little crunch, that's perfect.

Can I freeze burger buns? How to Defrost Hamburger Brioche Buns

Yes, you absolutely can freeze burger brioche buns. Place the baked and cold brioche burger buns to a freezer bag and place in the freezer for up to three months. You can defrost hamburger brioche buns two ways. Remove them from the freezer bag, place on a baking sheet, lined with parchment paper and place in the oven for 2 - 3 minutes or leave them out on room temperature for about 30 minutes. For the best possible result, slice each burger bun in half lengthways and toast the interior in a frying pan until golden brown.

How long do brioche buns last

You can make these brioche buns up to two days in advance. Store them in a plastic bag at room temperature before using. Or freeze them for up to three months.

How do you toast a brioche bun on a burger

Toasting a brioche bun for a burger is the best trick ever. Using a serrated knife, cut each bun in half. Place a frying pan over medium-low heat and press the interior side of the bun against the frying pan to toast. Don't use any oil or butter, you just want to toast your bun until beautifully golden brown. This will prevent your burger from becoming soggy and wet.

METHOD

  • activate yeast

    In a bowl combine milk, 50 ml / 1.8 oz water, active dry yeast, and sugar. Set aside and let the yeast mixture rise for about 10 minutes.

    Tip
    The water should not be too hot or it will kill the yeast. Make sure it has around 35°C / 95 °F.

    In a bowl (or in a bowl of a stand mixer, fitted with a dough hook) combine all-purpose flour and salt. Add the yeast mixture and stir to combine well, using a spatula. Using your hands, knead into a nice, smooth dough. Knead for about 5 minutes by hand or 2 - 3 minutes in a stand mixer. Add cubes of softened butter and knead the butter into the dough, until there are no more visible pieces left. Knead for about 5 minutes by hand or 3 - 4 minutes.

    Cover the bowl with a plastic wrap or a kitchen towel. Leave the dough to proof at room temperature for about 60 minutes or until doubled in size.

    Lightly flour the dough and transfer it to a clean work surface. Divide the dough into 8 equal parts, using a metal dough scraper or a sharp knife. Take each piece of dough and roll between your hands until you get a perfectly round ball. Place on a large baking sheet lined with parchment paper. Make sure there's enough room in between the buns. Gently brush each bun with egg wash. Cover with plastic wrap and leave the buns to proof at room temperature for 50 minutes or until doubled in size. Preheat your oven to 200°C / 395 °F.

    Remove the plastic wrap and lightly brush the buns for the second time. Sprinkle with sesame seeds. Create steam in the oven. You can either spray some water into the oven before placing the baking sheet with the buns in the oven or you can place a roasting pan filled with 1 cup of water at the bottom of your oven. Then place the baking sheet with buns on the middle rack and bake. Bake the burger brioche buns for about 15 minutes at 190°C / 375 °F, then carefully remove the roasting pan with water and continue to bake for another 10 minutes or until golden brown. Remove from the oven and transfer the buns to a wire rack to cool.

    Eat the buns right away or store them in a freezer bag and freeze for up to 3 months.
